VOD: Youtube Loves KoGi's Taco's

Last week the folks behind the Zocalo Public Square lectures turned their attentions to food in polyglot Los Angeles, specifically whether or not a dish can be ever "authentic:"

Authenticity is a virtue many of us prize in our restaurants. But Los Angeles is also a city where the California roll was born and the best pizza hews to a standard more Californian than Neapolitan. [full Zocalo]

The LA Weekly's Pulitzer Prize winning food critic Jonathan Gold was on hand to moderate a group of chefs that included Nancy Silverton of Mozza, Jimmy Shaw of LoterĂ­a Grill and Sarintip "Jazz" Singsanong of Jitlada.

Los Angeles being a town that also privileges the hottest and the latest, Korean taco truck KoGi was represented by chef Roy Choi. Below he explains how they came up with their two-great-tastes-that-taste-great-together invention
